Spring is here and with it our very special seasonal eggs. As the weather warms up, you will find our Ostrich, Rhea, Turkey Goose, Bantam, Pheasant eggs are back in store. Why not try all of them for a dinner party taste-test-fest?
New for this season we have Guinea Fowl eggs. Guinea Fowl eggs have a thicker oatmeal-coloured shell and a rich flavoursome yolk. Originally native to Africa, Guinea Fowl are very noisy birds and it is not surprising as they have something to shout about. Their eggs are a delicate and elegant treat. Soft-boiled or hard-boiled they add an extra something to salads especially in Mark Hix mayonnaise, one of our new recipes for this Spring.
