Smoked Salmon and Poached Duck Egg on Toast

Enjoy a fantastic start to the weekend with this delightful breakfast, ideal as a brunch on a lazy Sunday morning.


  • 4 slices of Brown toast
  • 4 slices of Smoked Salmon
  • 2 Duck eggs
  • Lemon wedges
  • 1 tsp freshly chopped chives
  • Salt and freshly ground black pepper

Poach the eggs for 3 ½ minutes. Place your toasted and buttered brown bread, in the middle of two serving plates. Layer your smoked salmon over the slices of toast and then remove your poached eggs using a slotted spoon and place on top of the salmon, season with salt and pepper.
Garnish with chopped chives and lemon wedges.
