Avocado baked quail eggs

  • Pinch of maldon salt
  • Pinch of pepper
  • Pinch of paprika
  • 2 quail eggs
  • 1 red chilli

1. Preheat oven to 200C
2. Halve an avocado and remove the seed, (slice off the back of the avocado so it can stand up on plate and doesn’t roll around.)
3. Transfer avocado to oven proof tray.
4. Crack a quail egg in the pit of each avocado.
5. Top with chopped chilli, paprika, pepper and maldon salt.
6. Bake for around 7-10 minutes until quail egg is cooked with a runny yolk.
